The Vietnamese don't spend a long time over their meals. They're busy people.
At 7.36pm precisely, we left The Hanoi Rendez-Vous Hotel on Hang Dieu Street, to choose somewhere in the Old Quarter for dinner.
At 7.51pm precisely, we had chosen where to eat - as well as having been ushered to our seat, ordered, eaten, paid and left again. We stood on the street, heads spinning.
If you are in Hanoi any time soon and want the best Vietnamese food in the Old Quarter and maybe the city, try Bam Bo Nam Bo at No. 67 Hang Dieu. It may feel like a pedestrian underpass but it is full of Vietnamese people enjoying the only thing on the menu; noodles, beef, pak choi, spring onion and peanuts in a delicious stock.
From the table condiments, add a squeeze of fresh lime juice and some soy, but go easy on the chilli sauce. It sits innocently in a large measuring jug, suggesting that it must be mild because they go through litres of the stuff every night, but be warned.
Knock it back with a cold Hanoi beer and don't call it fast food.
It's just good food for people with other things to do.
